We promise that this recipe will convert you, if you thought that healthy doesn’t equal delicious.
Fluffy Egg White Omelette
Ingredients
- 2 pcs large chicken eggs
- 25 gm diced red capsicum
- 5 gm chopped coriander leaves
- 1 pc Julien chilli
- 2 gm fresh beansprouts
- 4 gm diced shallots
- 10 ml light soy sauce
Instructions
Method
- In a pan, sauté off the red pepper until soft and fragrant (approximately two minutes).
- Preheat the oven to 160 degrees C.
- In a mixing bowl, carefully separate the egg whites from the yolks.
- Using either a hand whisk or an electric one, beat the egg whites until they stand up firm (stiff peaks).
- Grease a small non-stick, oven proof pan with olive oil.
- Spoon the beaten egg whites into the non-stick pan.
- Generously spread the cooked capsicum all over the top of the egg whites.
- Cook in the oven for three minutes at 160 degrees C.
To Serve
- Turn the fluffy, cooked omelette out of the pan directly onto the serving plate.
- Sprinkle chopped coriander leaves, chilli and diced shallots on top.
- Serve immediately with a side of soy sauce for dipping.
